MATERIALS
Makes 9 inch round cake pan or 12 muffins
1 1/4 cups white whole wheat flour
1 cup cornmeal
1/3 cup sugar
1 tsp salt
1 tsp baking powder
1 1/4 cup plant-based milk
1/3 cup avocado oil (or other oil)
PROCEDURE
1. Preheat oven to 400 degrees F and lightly grease pan.
2. In a medium mixing bowl, combine all of the dry ingredients.
3. Add milk and oil and stir until well combined.
4. Pour batter into pan and bake for 20-25 min or until toothpick comes out clean.
VARIATIONS
Use whatever flour you have on hand.
